Ingredients:1 can organic full fat* coconut milk1 teaspoon vanilla extractsweetener** (maple syrup, honey, allulose, stevia, or organic raw sugar) to taste Directions:Put can of coconut milk in the refrigerator overnight. A few hours won’t do if you want really creamy whipped cream.Open can and carefully scoop the hardened coconut cream into a bowl, taking care not to add the milk at the bottom. Keep the liquid for use in smoothies and other dishes!Add vanilla extractUsing an electric mixer (hand won’t be as effective) whip the coconut cream until it’s frothy and has peaks. Add small amounts of sweetener as you go, testing until it tastes the way you like it.Chill or, you know, eat it right there. It should keep for a day, so make it as close to serving it as possible. *coconut cream needs to be full fat in order to emulsify. Make sure to choose brands with as few added ingredients as possible, and stay away from any brands that have stabilizers **different sweeteners will give your whipped cream different flavors, so if you’re going to experiment with your favorite sweetener, go slowly and taste often. Beer Jelly Carmalized Onions Carmalized onions are great for everything, burgers, salads, dips….the possibilities are endless. Now, add some Potlicker Kitchen Beer Jelly and take your onions to the next level! (serves 1 onion lover)1 large onion, sliced into 1/8″ to 1/4″ rings1 Tablespoon Potlicker Kitchen Beer or Wine JellySalt and pepper to taste Heat a cast iron or other heavy-bottomed pan until very hot. Spread the onions thinly across the bottom of the pan. The onions should sizzle as soon as they hit the pan. Sprinkle with salt and pepper. When the onions begin to blacken & caramelize (this will take 2-3 minutes depending on your pan), use a wooden spoon to stir them. Cook for 1-2 minutes more and then add jelly to the hot pan. Stir the onions until they become soft a deep golden brown. INGREDIENTS4 oz. vegan butter Mikoyo’s, room temperature1/2 cup organic sucanant1/4 cup organic cane sugar1 teaspoon vanilla extract1 prepared vegan egg, chia, flax or egg replacer power1 cup organic oat flour you can divide the flour by using ¾ cup oat and ¼ cup almond flour1/2 teaspoon baking soda1/2 teaspoon cream of tartarpinch of sea salt2/3 cup dark or semisweet chocolate chunks (Enjoy Life)2/3 cup chopped walnuts or pecans or any other nut you like INSTRUCTIONSPreheat the oven to 375 degrees F. Line a cookie sheet with unbleached parchment paper.In the bowl of a mixer, beat the butter and sugars until soft and creamy. Add the vanilla and “egg” and beat in. Add the flour, baking soda, and sea salt, and beat again to combine. Stir in the chocolate and walnuts.Scoop dough onto cookie sheet in about 1-2 tablespoon balls. Bake for 15 minutes. Cool slightly and enjoy! A voice I don’t recognize says “Pam?” Yes? I say, still not sure who I’m talking to. “I’m at the hospital” the voice answers. “Who is this?” I ask. “Your sister.” Oh! It had been so long since I’d heard from her, I didn’t recognize her voice. “I am at the hospital with Mommy.”  I ask what’s wrong. “She can’t breathe. She called me about 3 am, and I called 911.” “Do you know if she had a heart attack?” I ask. They don’t know. “Is she still in the ER?” “No” my sister answers, “she has a room.” Reworking my day is difficult. Between running my small business and homeschooling my children my time is at a premium, but I manage to leave work early and arrive with the kids at 4:30 pm to find my mother hooked up to a heart monitor. She is sitting up, and recognizes all of us. “Do you know anything more?” I ask my sister, but there are no test results yet. Before we leave I ask her to please keep me posted. The following evening my husband and I return to the hospital for a visit. Mom is sleepy and seems to be out of it. Beside her bed a Respiratory Tech has just finished administering a breathing treatment. There is also a “Sitter” at her bedside. Why does my mother need a Sitter? I wonder. Is she that ill? I call for a nurse and ask for an update on my mother’s medication list. I explain that she is taking several Benzo’s, and how concerned I am for her health. “Are you her Power of Attorney (POA)?” she asks. Yes

In times of stress, I often find my blood pressure to be a bit on the high side. Instead of taking blood pressure meds I have opted to supplement with Herb Pharm’s Blood Pressure support and a dropper of Motherwort. I never leave the house or jump into bed without a dose of either, and I’ve found my pressure will come down, along with the added benefit of improved sleep. What does food have to do with everyday mood? Everything! During her withdrawal from benzodiazepines, I used food to help with my mother’s anxiety, depression and emotional well being. I cleansed her diet of caffeine, sugar, dairy and gluten. On those occasions that my sister let her have one of the above, my mother would at some time present with psychosis and rage, sometimes right away, sometimes not until days later. My sister had to learn the hard way that food affects your mood. So, food can actually affect your mood? Absolutely! It does every time you eat. What we choose to put into our bodies can affect the delicate balance of certain neurotransmitters (gut and brain chemicals), along with other hormones that play a role in your mood and appetite. Forget about the chicken soup, try some Mineral Broth!   Ingredients:6 unpeeled carrots, cut into thirds2 unpeeled yellow onions, cut into chunks1 leek, white and green parts, cut into thirds1 bunch celery, including the heart, cut into thirds4 unpeeled red or russet potatoes, quartered2 unpeeled sweet potatoes, quartered5 unpeeled cloves garlic, halved1/2 bunch fresh flat-leaf parsley1 (8-inch) strip of kombu or dulse12 black peppercorns4 whole allspice or juniper berries or 1/2 teaspoon ground cinnamon, ginger, nutmeg and ¼ teaspoon cloves2 bay leaves8 quarts cold, filtered or spring water1 teaspoon Real Salt Directions: Rinse all of the vegetables well, including the sea vegetables. In a 12-quart or larger stockpot, combine the carrots, onions, leek, celery, potatoes, sweet potatoes, garlic, parsley, sea vegetables, peppercorns, allspice, and bay leaves. Fill the pot with the water to 2 inches below the rim, cover, and bring to a boil. Remove the cover, decrease the heat to low, and simmer, uncovered, for at least 2 hours. As the broth simmers, some of the water will evaporate; add more if the vegetables begin to peek out. Simmer until the full richness of the vegetables can be tasted. Strain the broth through a large, coarse-mesh sieve (remember to use a heat-resistant container underneath), then add salt to taste. Let cool to room temperature before refrigerating or freezing. Use the remaining vegetables in sauces, soups, over pasta or in your next smoothie! Prep Time: 10 minutesCook Time: 2 to 4 hoursStorage: Store in a glass airtight container in the refrigerator for 5 to 7 days or in the freezer for 4 months.  If freezing be sure to leave about an inch from the top of the container to allow for expansion. Pre-heat oven to 450 degrees F. 2. Remove as much moisture as you can from the zucchini. Add zucchini to large bowl and mix in remainder of the taco shell ingredients (egg, parmesan cheese, bread crumbs, black pepper, salt, garlic powder, and cumin). 3. Cover baking sheets with parchment paper or oven proof baking mat. Scoop about ¼ cup of mixture and press down on baking pan into a thin circle, about 5” wide. Repeat for remainder of mixture. 4. Bake shells for about 25 minutes, or until the shells look “crisp’ and brown around the edges. We like to bake the shells a little longer for a more charred texture and flavor. Just be careful to not bake too long or else the shells dry out and are hard to peel off. 5. After zucchini soft taco shells are cool, gently peel them off the parchment paper. Enjoy these shells as a snack or a wrap, so think beyond the taco. Don’t bake them too long, or they’ll dry out and be difficult to peel off. To help from sticking, you can lightly spray the parchment paper with oil. But you’ll end up with a less crispy shell. Squeezing out as much excess water in the grated zucchini will make the taco shells a little more “firm”. One method is to microwave the zucchini till moisture releases, then squeezing out the water. Or lightly sautéing the zucchini for a few minutes, then squeezing out the water. Just be careful to not cook the zucchini too much or use too much oil, or else you’ll get mush. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes. Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 50 minutes.
